Pumpkin tastes naturally deliciously sweet, but many children do not like this vegetable, just because it is a vegetable. With these cookies you hide the pumpkin in a nice healthy and sugar-free pastry: You do not have to feel guilty after eating these cookies because you have a portion of vegetables inside and no sugar;)

I wanted to try them because I like candy in between but I always want something nutritious. The combination of oatmeal and spelled flour makes that you can also eat the cookies for breakfast.

What do you need:

100 g spelled flour
100 g of oatmeal flakes
1 teaspoon baking powder
200 g of pumpkin
75 g coconut butter
20 g Greensweet-stevia sweet
10 drops of Greensweet liquid stevia orange
Greensweet-stevia chocolate pure (a few pieces)
Egg yolk in the dough
Protein to rub the biscuits just before they enter the oven

This is how you make it:

Peel the pumpkin and cut it into cubes (200 g), boil it gently in a little bit of water so that you can get it (after draining the water). Add the coconut butter as soon as you start to crack because the temperature will soften the butter quickly and you will have no butter lumps. Then add the egg yolk, spelled flour, oatmeal, baking powder and Greensweet sweet and the liquid stevia (both the powder and the drops). Then grate (according to your taste) some chocolate through the batter and knead it! Then roll the dough out until it is about an inch thick and cut out the biscuits with molds. Place the cookies on baking paper on the baking sheet. Before they go into the oven you can put some chocolate flakes over it and finally coat the cookies with some protein.

I preheated the oven to 160 degrees and I baked the cookies for 25 minutes. adding orange juice, but hesitating about consistency. The jug is of course happy that the dough is too weak. Zest of orange peel is also an option. Do not expect typical cookies, but a tasty and healthy variant!
