What you need:(for 4 people, 10 points per person)

800 grams chicken breast (cut into cubes)
150 ml Bon Coco organic coconut milk light (available at Appie)
100 grams Calvé peanut butter
1 red onion (coarsely chopped)
1 onion (coarsely chopped)
4 garlic cloves (sliced)
50 ml Heinz 50% tomato ketchup
20 grams coconut grater
15 grams of sambal badjak
15 grams Greensweet Stevia Brown
15 ml ginger syrup
30 ml soy sauce (15 ml for the cauliflower rice and 15 ml for the peanut chicken)
25 mg flour
3 small maggi cubes (the old-fashioned ones in the yellow-red package, crumbled)
salt and black pepper from the mill

This is how you make it:

Prepare everything measured, washed, cut and weighed.
Sprinkle the chicken breasts with salt and pepper and flour.
Put everything in the slow cooker. Mix together and set the slow cooker on low for 3 hours.
Enjoy your meal!
Delicious with cauliflower or broccoli rice (0 points) and baked pak choi (1 point) and spring onions on top. If you have any points left, it is nice to sprinkle some fried onions or peanuts over the dish.


fried pak choi

What you need: (For 4 people, 1 point per person)

2 whole pak choi (sliced)
30 ml sweet soy sauce
30 ml soy sauce
3 cloves garlic (crushed and finely chopped)
1 vegetable stock cube (crushed)
100ml water

This is how you make it:

Put the soy sauce, soy sauce, water, stock cube and garlic in a pan and let it get hot.
Add the pak choi and stir fry for 5 minutes on high heat.
Enjoy your meal!

Baked Broccoli Rice (or Cauliflower Rice)

What you need: (for 4 people, 0 points per person)

400 grams broccoli rice (or cauliflower rice)
1 vegetable stock cube (crushed)
100ml water
15 ml sweet soy sauce
15 ml soy sauce
10 grams of sambal badjak

This is how you make it:

Put the water, vegetable stock cube, soy sauce, soy sauce and sambal in a pan. Let it get hot. Add the broccoli rice and stir-fry for 5 minutes.
Enjoy your meal!
