1 chicken breast (250 grams)
½ liter of water
50 grams coarse sea salt
50 grams Greensweet Brown
1 tablespoon black peppercorns (crushed in the mortar)
5 juniper berries (crushed)
3 cloves
3 cloves smoked garlic (crushed, not chopped)
2 bay leaves
1 tablespoon dried marjoram
1 tablespoon dried thyme


This is how you make it:

Boil all ingredients in the half liter of water and let it cool down.
Place the chicken breast in the brined water and refrigerate for 6 hours.
Remove the chicken from the brine and pat dry with kitchen paper.
Let the chicken dry for 2 hours on a rack in the fridge. Just cover it.
Place a heaping tablespoon of wood moth at the bottom of the smoker.
Place the smoker on the gas stove.
Place the chicken breast on the grid.
Close the lid almost and turn on the fire, the lid should remain open a very small crack.
If you see smoke coming out of the crack, slide the lid completely closed so that the smoke stays in the oven.
Smoke the chicken for 30 minutes.
