Apple pie with almond paste
What do you need:
100 grams of almond flour,
100 grams of coconut flour,
100 grams of flaxseed meal,
1 teaspoon of tartar baking powder,
1 tbsp coconut oil (melted),
1 tbsp gingerbread spices (spice or cinnamon is also possible),
pinch of Himalayan salt
100-125 ml of almond milk.
125 grams of almond flour,
grate ½ (small) organic lemon,
juice from a ½ (small) organic lemon,
1 egg ersatz.
3-4 gold nets (or any other apple variety),
1 tbsp cinnamon.
(also delicious with dried fruit, such as raisins, figs, dates or apricots).
1/4 of the dough + 20 grams (gluten-free) oatmeal and some walnuts (other nuts are also possible).
This is how you make it:
Preheat the oven to 170 degrees and line the pie base with baking paper and grease the edges with some (coconut) oil. I used a 22 cm cake pan.
First get started with the almond paste. Put all ingredients in the food processor and let it do its job. When you get a ball, turn off the food processor. Taste if it is like that. Make a ball and wrap it in cling film and refrigerate for about 30 minutes.
Make sure your food processor is clean. Put all ingredients in the food processor with the exception of the almond milk and turn on the food processor. Gradually add the almond milk. The dough should not be too wet or dry. Make a ball and wrap it in cling film and refrigerate for about 30 minutes.
Meanwhile, peel the apples and cut into cubes or flat slices. Put them all in a large bowl and sprinkle the greensweet erythritol and cinnamon on top. Shovel carefully.
Take the dough out of the refrigerator for the bottom and edges. Keep ¼ of the dough aside. Press the dough well on the bottom and cover the edges with the dough. Then cover the bottom with your homemade almond paste.
Place the apple slices or cubes on the bottom.
If you would like to add dried fruit or nuts to it, you do that in step 4.
Crumble ¼ of the dough into a bowl and add the oatmeal and some walnuts. When you have a crumbly mixture, you sprinkle it on the apple slices or cubes.
Put the cake tin in the oven and after about 50 minutes your apple pie is ready.
Let the cake cool and cut at least 8 pieces. Delicious with a dot of coconut cream.
Does the cake not go up right away? You can also freeze the cake well. Freeze the points loosely and preheat the oven to 170 degrees and then put your point pie in the oven for about 15-20 minutes. This way you always have a nice piece of cake at home.
