What do you need:

Bottom:

100 grams of almond flour,

100 grams of coconut flour,

100 grams flaxseed meal,

1 teaspoon tartar baking powder,

40 grams greensweet brown,

1 tbsp coconut oil (melted),

1 tbsp of gingerbread spices (cinnamon or cinnamon can also be used),

sniff Himalayan salt

100-125 ml almond milk.

 

Almond paste:

125 grams of almond flour,

125 grams Greensweet Erythritol,

rasp ½ (small) organic lemon,

juice of a ½ (small) organic lemon,

6-8 drops greensweet liquid stevia almond (optional)

1 egg-ersatz.

 

Filling:

3-4 gold bars (or another type of apple),

2 tbsp Greensweet Erythritol or greensweet brown

1 tbsp cinnamon.

(also delicious with dried fruit, such as raisins, figs, dates or apricots).

 

Top:

1/4 of the dough + 20 grams (gluten-free) oatmeal and some walnuts (other nuts too).

 

This is how you make it:

 

Step 1

Preheat the oven to 170 degrees and coat the cake base with baking paper and grease the edges with some (coconut) oil. I used a cake mold of 22 cm.

Step 2

First start with the almond paste. Put all the ingredients in the food processor and let it do its job. When you get a ball you turn off the food processor. Taste whether it is so flavored. Make a ball and wrap it in cling film and place in the refrigerator for about 30 minutes.

Step 3

Make sure your food processor is clean. Put all ingredients in the food processor with the exception of the almond milk and switch on the food processor. Add the almond milk little by little. The dough should not be too wet, but also not dry. Make a ball and wrap it in cling film and place in the refrigerator for about 30 minutes.

Step 4

Meanwhile, peel the apples and cut them into cubes or into flat slices. Put them all in a large bowl and sprinkle the greensweet erythritol and cinnamon over them. Carefully scoop.

Step 5

Remove the dough from the refrigerator for the bottom and edges. Keep ¼ part of the dough aside. Press the dough well on the bottom and cover the edges with the dough. Then cover the bottom with your homemade almond paste.

Step 6

Place the apple slices or cubes on the bottom.

If you would like to add dried fruit or nuts, then do so in step 4.

Step 7

Crumble ¼ of the dough into a bowl and add the oatmeal and some walnuts. When you have a crumbly mixture, you sprinkle it on the apple slices or cubes.

Step 8

Slide the cake tin into the oven and after about 50 minutes your apple pie is ready.

Step 9

Allow the cake to cool and cut out at least 8 pieces. Delicious with a dot coconut cream.

Step 10

Is not the cake going straight away? You can also freeze the cake. Freeze the tips and preheat the oven to 170 degrees and then put your tip cake in the oven for about 15-20 minutes. So you always have a nice piece of cake at home.
