Apple pie with almond paste
What do you need:
100 grams of almond flour,
100 grams of coconut flour,
100 grams of linseed flour,
1 teaspoon tartar powder,
1 tbsp coconut oil (melted),
1 tbsp speculaas spices (cake spices or cinnamon is also possible),
pinch of Himalayan salt
100-125 ml almond milk.
125 grams of almond flour,
grater ½ (small) organic lemon,
juice of ½ (small) organic lemon,
1 egg satin.
3-4 gold nets (or another apple type),
1 tbsp cinnamon.
(also delicious with dried fruit, such as raisins, figs, dates or apricots).
1/4 of the dough + 20 grams (gluten-free) oatmeal and some walnuts (other nuts are also possible).
This is how you make it:
Preheat the oven to 170 degrees and cover the cake base with baking paper and grease the edges with some (coconut) oil. I used a 22 cm cake pan.
First get started with the almond paste. Put all the ingredients in the food processor and let it do its work. When you get a ball, turn off the food processor. Taste if it is that way on taste. Make a ball and wrap it in cling film and put it in the fridge for about 30 minutes.
Make sure your food processor is clean. Put all the ingredients in the food processor except the almond milk and turn on the food processor. Add the almond milk little by little. The dough may not be too wet, but also not dry. Make a ball and wrap it in cling film and put it in the fridge for about 30 minutes.
In the meantime, peel the apples and cut into cubes or into flat slices. Put them all in a large bowl and sprinkle the greensweet erythritol and cinnamon over it. Gently stir.
Take the dough from the refrigerator for the bottom and edges. Separate ¼ part of the dough. Press the dough well on the bottom and cover the edges with the dough. Then you cover the bottom with your homemade almond paste.
Place the apple slices or cubes on the bottom.
If you would like to add dried fruit or nuts, you do so in step 4.
Crumble ¼ of the dough in a bowl and add the oatmeal and some walnuts. If you have a crumbly mixture, then sprinkle it on the apple slices or cubes.
Slide the cake pan into the oven and after about 50 minutes your apple pie will be ready.
Let the cake cool down and cut out at least 8 pieces. Tasty with a dot of coconut cream.
Does the cake not immediately go up? You can also freeze the cake well. Freeze the dots loosely and preheat the oven to 170 degrees and then put your dot cake in the oven for about 15-20 minutes. So you always have a nice piece of cake at home.
