What do you need:


150 grams of spelled flour,

50 grams Greensweet Erythitrol,

100 grams of coconut oil,

pinch of salt (I had rock salt from Santa Maria),

1 hefty teaspoon cinnamon powder,

2 teaspoons baking powder,

2 medium eggs,

1 teaspoon of vanilla essence

2 overripe bananas.

This is how you make it:

Punch the bananas into a kind of smooth banana sauce. Put all dry ingredients in a bowl and mix all wet in a different bowl. For the wet ingredients, first add the "banana sauce" and then add the dry ingredients spoon-to-spoon, while you mix the batch lightly and smoothly with a whisk. When everything is through, pour your batter into a greased cake tin (in our case the square Airfryer oven dish). Bake your banana bread for about 20 minutes at 170 degrees Celsius. If a skewer comes out clean, your bread is cooked and done. We turned the bread into the mold for a little while and did it for another 5 minutes in the Airfryer. The recipe can of course also easily be made in the normal oven.
