Peanut sauce for satay
What do you need: (for 4 people, 2 points per person weight watchers)
45 grams of Calvé peanut butter light
1 teaspoon of sambal oelek
1 small onion (chopped)
3 cloves of garlic (crushed and minced)
3 tablespoons soy sauce
1 teaspoon cumin powder (djinten)
1 teaspoon coriander powder (ketoembar)
1 1⁄2 tablespoon (s) of white wine vinegar
1 teaspoon of laos powder
200 ml of water
1 dessert spoon of Greensweet Erythritol sugar (= 0 points!)
1 piece (1 x 2 cm) ginger root (sliced small)
30 ml light coconut milk
This is how you make it:
Fry the onion with sambal, the djinten, the ground coriander seeds, the laos and the Greensweet erythritol sugar briefly in a little water (yes, right, no butter or oil but water!).
(if it goes too fast, always add some water and keep stirring, do not add butter or oil!)
When the onions are soft, add the garlic and ginger and stir them briefly.
Add the water, the white wine vinegar and the soy sauce. Stir together and bring to the boil. Let it simmer for a few minutes.
Add the peanut butter and coconut milk, bring to the boil and simmer gently for 10 minutes, stirring occasionally.
