Smoked fish salad with pesto dressing

What do you need: (for 2 people, 10 points per person)

300 grams of mixed iceberg lettuce

2 tomatoes (in slices)

200 grams of smoked salmon

180 grams of mackerel fillet

125 grams of trout fillet (pepper)

200 grams of olives filled with anchovies

10 surimi sticks

Amsterdam outings (according to choice, no points)

gherkins (according to choice, no points)

For the dressing:

2 tablespoons red pesto (green also allowed)

4 tablespoons of Remia 5% fat fries sauce

1 tablespoon white wine vinegar

1 tablespoon of lime juice

1 tablespoon mustard (choice, mild or sharp)

1 tablespoon of Greensweet Erythritol

pepper and salt from the mill (to taste)

 

This is how you make it:

Mix all the ingredients for the dressing together.

Put the lettuce on a plate and add some dressing.

Place the fish, the tomatoes, the olives, the pickles and the Amsterdam onions on the lettuce.

Finish with the rest of the dressing.
