What do you need:

300 grams of pumpkin puree
80 grams oatmeal
30 grams of coconut flour
30 grams of whey vanilla (can you substitute for oatmeal and vanilla extract)
10 grams of baking powder
1 small apple (about 125 grams)
4 grams of cinnamon
20 grams of Greensweet stevia erythritol

This is how you make it:

Preheat the oven to 175 degrees and coat a baking sheet with parchment paper.

Mix all dry ingredients together and then mix in all wet ingredients 1 before and through. I used a hand mixer so that it is well mixed. Finally, do the apple in small blocks through it. (you can just keep the skin there, it does not have to be natural)


Put the batter in the baking tin and then it goes for about 35 to 40 minutes in the oven. Allow the cake to cool for 10 minutes in the cake tin and then remove the cake. Let it cool down before you cut it, otherwise it will quickly disintegrate. (I once again did not have patience, so my slices did not get so nice)

And ready is your pumpkin apple cake.
