Vanilla cupcakes from Jessica Mendels
What do you need:
200 grams spelled flour
200 grams of coconut oil
70 grams of Arenga palm sugar
70 grams of Greensweet Erythritol
4 drops of Greensweet liquid stevia with vanilla flavor
3 eggs
1 / 2nd teaspoon of baking powder
1 / 2nd teaspoon of salt
It was Eve's birthday and we were celebrating! I always try to make everything as healthy as possible, but because I felt so festive now and we are already subject to so many restrictions on food, I wanted to make an extra delicious cake and not whole-grain and with a lot of fiber, but just very tasty . We are without sugar, wheat and dairy, but with white spelled flour.
Because I like easy and quick, with not too much washing up, I put my mixing bowl on the scales and weigh everything in one go.
Because it was a hot day, the coconut oil was already nice and soft.
If that is not the case, you have to let it melt in a pan (au bain-marie) or in the microwave.
I turned on my Magimix for 5 minutes until I had a nice, even batter.
With two tablespoons I have divided the batter into 24 cake tins that I can put in a cupcake tray in the oven.
I preheated the oven to 180 ℃ and baked the cakes in 20 minutes at 170 aar. When I first checked if they were cooked by piercing it with a skewer, they were good right away.
Is that not the case for you and is there still liquid batter on your skewer? Leave them in the oven for another 5 minutes and then check again.
