What do you need:

4 eggs split

1 el. Greensweet Extra Sweet

1 el. Greensweet Erythritol

5 tbsp. Spelt flour

4 deciliters of Greek yogurt

Grater of 1 lemon Juice of 1 lemon

100 ml of water

200 gr. Coconut blossom sugar

50 ml juice of pineapple

4 writing pineapple

This is how you make it:

Preheat the oven to 180 ° C

1. Beat the egg yolk with the Greensweet stevia (X-tra Sweet & Erythritol) to a light and airy mass. Sift the spelled flour over the egg mixture, gently pour the flour through.

2. Add the yogurt, lemon juice and juice of half a lemon until everything is well mixed.

3. Beat the egg whites to a firm foam and add the foam in parts to the yogurt mixture with a spatula. DO NOT MOVE.

4. Pour the mixture into a greased spring form, fry the cake for 40 to 60 minutes until the top is nicely browned. He must have been raised like a souffle, but it does not matter if he collapses a little later.

For the pineapple syrup:

Allow the water, sugar, other lemon juice, pineapple juice to be reduced to syrup. Allow the syrup to cool down in the refrigerator. Grill the pineapple, then put them on top of the cake with a nice dash of syrup.
