Knipers by Be healthy and love life
What do you need:
500 gr of flour
65 grams Greensweet Extra Sweet
200 gr butter (margarine)
3 eggs
3 tablespoons vanilla extract (I make this myself but you can also make it yourself)
2-3 tablespoons of lukewarm water

Preparation
Melt the butter in a pan and allow to cool slightly.
Mix the flour with the Greensweet Erythritol and Extra Sweet and pour the butter.
Mix this to create a crumbly dough.
Then mix in 1 by 1 the eggs and the vanilla extract.
Add a few tablespoons of lukewarm water to make a dough where you can still roll balls.
Leave the dough in the refrigerator overnight.
Roll balls of the dough to the size of about 2-3 cm diameter. Place a ball in the middle of the preheated (and slightly greased) waffle iron, squeeze the iron and bake the kneepicks 1 for 1 in about 15 to 20 seconds.
Remove the wafers from the iron and place them on a shelf for a few minutes to cool down until they are hard.
Knipers can be stored well in an airtight drum (do not put in until they have cooled down completely).
