Sugared tiger nut rocks
You need this:
- 125 grams of greensweet-stevia erythritol sugar
- a hefty tablespoon of greensweet-stevia extra sweet
- 2 large tablespoons of ceylon cinnamon powder
- 400 grams of tiger nuts / chufa nuts
This is how you make it:
Let the tiger nuts soak in hot water for 6-8 hours or longer. Rinse them. Put the cinnamon and the sugars in a thick-bottomed pan, and continue stirring until the mass is melted on medium heat. Add the tiger nuts and continue to move for about 5-8 minutes. If the mass has become somewhat syrupy, turn off the heat. Line a baking tray with parchment paper and scoop the mountains on the baking tray. Let it harden for an hour.
