What do you need:

Bottom:

35 grams of goji berries (let them know for 10 minutes in warm water),

100 grams of dates (when using hard dates, soak in warm water)

1 teaspoon vanilla,

raps from a 1/2 organic lemon

50 grams of puffed quinoa (more is also possible if you want a thicker bottom).

Filling:

1000 grams of rhubarb,

500 grams of (frozen) strawberries,

2 tbsp Greensweet icing,

raps from a ½ organic lemon,

2 beetroot (peeled),

12 grams of agar

200 ml of water.

This is how you make it:

Step 1

Take a cake pan and cover it with baking paper. Also cover the edges with baking paper or grease with some vegetable butter. Also make sure there is space in your fridge!

Step 2

Put the soaked dates, goji berries, vanilla and lemon zest in a large bowl and add the puffed quinoa. Knead everything well with your hands.

Do you want a thicker bottom? Then add more puffed quinoa and when it gets too dry, add more dates. Just tune in to what you like.

Step 3

With your dough ball you make the bottom of the cake. Then place it in the refrigerator so that it can cure.

Step 4

Clean the rhubarb and cut into large pieces. Put them together with the frozen strawberries and the peeled beetroot in a pan with a layer of water. Put it on the fire and after about 15-20 minutes it is ready. Drain and drain. Do you use fresh strawberries? Then you don't have to cook them.

Step 5

Put the rhubarb and beetroot together with the strawberries, 2 tablespoons of Green Sweet Icing and lemon zest in the food processor. Get a smooth smoothie. Taste if you like it so much. Do you want it sweeter? Then add more Green Sweet Icing or what you use.

Step 6

Take a large pan and add 12 grams of agar-agar with 200 ml of water. Bring to the boil while stirring. Then add the pie filling. Continue to stir well for 2 minutes.

Step 7

Take the bottom from the refrigerator and pour the mixture onto the bottom. Now put in the fridge and let it set. After 2-3 hours your cake is ready to be cut.

Step 8

Decorate the cake with fresh fruit. Think for example of blueberries, currants, strawberries or just what you like. Cut the number of points you want from the cake. You can also freeze the cake (in separate points).
