What do you need:

500 grams of papaya (1 piece),

juice of 1 lemon,

15 grams Greensweet jelly crystal

possibly some extra agar-agar.


Step 1

Cut the papaya in half and remove the seeds. Remove the peel and cut the papaya into pieces.

Step 2

Put the pieces of papaya together with the lemon juice and Greensweet jelly crystal with some water in a pan. Bring to boil.

Step 3

Now let the pan stand on the fire for 45 minutes and stir regularly through the fruit.

Step 4

Stamp or puree the fruit and taste if it is so to taste. Make it sweeter with eg agave syrup or greensweet stevia.

Step 5

Is your jam still too thin? Add some extra agar or more green sweet jelly crystal.

Step 6

Transfer the jam into a glass jar. Keep the jam closed in the refrigerator.

Step 7

Delicious on a cracker, coconut yogurt or make delicious royal cookies with it.
