Mint curd pie


You need this:

For the soil:

For the quiche topping:

  • 600 grams of biological / dynamic quark or other options (see above)
  • 2 grams of Agar Agar (powder)
  • 12 drops of greensweet-stevia mint
  • two kiwis cut into slices

This is how you make it:

Preheat the oven to 185 degrees. Grease a high round shape (20 cm) with avocado oil or coconut oil, and coated with baking paper. Grind all ingredients for the bottom in the food processor to a homogeneous mass. Pour into the mold and press to a firm round bottom. Bake the bottom in the middle of the oven until about 30-35 minutes, keep checking.

Put the curd in a saucepan and add the rest, let everything boil under constant stirring. Pour the curd on the bottom. Divide the kiwi slices over it. Allow to cool for a few hours and stiffen in the refrigerator.
