Combirecept Cookies & Cake a la Trijn
CAKE AND COOKIES CONTAIN
What do you need:
- 175 grams of almond flour
- 50 grams of coconut flour
- 150 grams of butter
- 50 grams of coconut oil
- 10 grams of cinnamon
- 75 ml of water
- 4 tablespoons of lemon juice
- 4 eggs
- 1 teaspoon baking powder
- 15 drops Greensweet liquid stevia vanilla
- 15 drops Greensweet liquid stevia chocolate
- 300 grams of Greek Yogurt
- 100 grams of mascarpone
- 150 grams of blueberries (fresh or thawed from the freezer)
- 100 grams of raspberries (fresh or thawed from the freezer)
- 5 leaves of gelatin
- 10 drops Greensweet liquid stevia raspberry
- If you want to give the cookies a layer / topping chocolate: 60 grams 85% dark chocolate
- Springform 18 or 24 cm
- Baking paper or baking mat
MAKE A DECISION
Preheat the oven to 195 degrees (180 degrees hot air). Put all ingredients in a mixing bowl and mix thoroughly.
MAKE A TASTE
Take a spear shape of 18 or 24 cm and grease it. The bigger you want the cake, the less batter for cookies you keep. I used the small spring form and still had enough for around 20 cookies. Take a part of the batter and cover the bottom with a low batter of about half a centimeter. Also make a small upright edge of the batter.
Take the rest of the batter. Take portions of about 30 grams. Turn a ball and press it flat on a baking tray with parchment paper or on a baking mat.
If you have a large oven, biscuits and cake bottom can be put in the oven at the same time. Bake for 15 minutes first and then turn the cookies over. Then bake for another 10 minutes. You can then leave the soil. Allow the cookies and the cake base to cool outside the oven.
MAKE A TAART
Divide the fruit (drained) over the cake base. Mix the Greek yogurt with the mascarpone and the other ingredients. Add the gelatine to this mixture. To make the gelatine, follow the instructions on the packaging. If you like a sweet cake, add extra Greensweet stevia to taste. Divide the mixture over the fruit. Then let the cake 'cure' in the refrigerator for 2 hours. The cake is also delicious at lunch or as a dessert.
COOKIES WITH CHOCOLA
Do you want to make the cookies a little better and healthier? Pure chocolate is very healthy. It has a good influence on high blood pressure and on your sugar level balance. And there is hardly any sugar in it. Heat the chocolate slowly and spoon a spoon on each biscuit or roll the cookies through the warm chocolate. Enjoy your meal!
