Cold potato dish

New potatoes are an excellent source of Vitamin C and potassium. Cold potatoes increase our blood sugar much less than warm.

Preparation time: Longer than 1 hour
What do you need: for 4 people

Approximately 10 (new) potatoes
1 red pepper
6 tomatoes or (even better) a bowl of cherry tomatoes
2 stalks of raw celery (first with peeler over it)
3 spring onions or bowl of cress or other fresh green herbs such as garlic, oregano, rosemary
2 tablespoons pine nuts
About 20 black olives
1 clove of garlic (submerge in boiling water for less sharp taste)

For the dressing, about 150 ml in total:

Shut apple cider vinegar
100-125 gr sour cream, hutskase or Greek or full yogurt
Large amount of olive oil and canola oil
Black pepper, organic herbal salt
2 tablespoons of dried Italian or Provencal herbs
A few drops of Greensweet-stevia natural or Raspberry.

Put in small pieces of salty herring or very small pieces of anchovies (instead of the pine nuts).
