Stuffed spelled biscuits (vegan)
What do you need:
- 500 grams of organic wholemeal spelled flour
- 2 heaped tablespoons greensweet stevia sweet vanilla
- One tablespoon of erythritol
- 10 grams of tartar baking powder
- 25 grams of pure coconut oil, melted
- A pureed banana
- Warm water
For the filling:
- 300 grams of almond flour
- Half a mashed banana
- 2 tablespoons of Greensweet Sweet Vanilla
For the garnish:
- Whole pecan nuts
- Greensweet Icing
This is how you make these filled spelled cakes:
Preheat the oven to 185 * C, line a baking tray with parchment paper. Stir all the ingredients for the cake together in a bowl while adding small amounts of warm water at a time, until a smooth dough ball forms. Make four flat cakes and place them on the baking tray. Make a paste of the almond flour, banana and stevia sugar, and divide it over the four cakes. Cover the cakes with the rest of the dough, shape into nice round cakes. Press a whole pecan nut into each cake and sprinkle with icing icing sugar. Bake the cakes in the middle of the oven for about 35-45 minutes, keep checking in the meantime. Let cool and sprinkle some more with icing icing sugar.
