What do you need: 2-4 portions

1 avocado (peel and kernel removed),

60 ml aquafaba (chickpea juice),

3 cloves of garlic (finely pressed),

½ lemon juice,

sniff Himalayan salt and

1-2 tsp Greensweet syrup gold.


Step 1

Put all the ingredients in the blender, food processor or high measuring cup and puree to a smooth emulsion.

Step 2

Spoon your avocado mayonnaise into a jar and store in the fridge.


Nice with some taco chips or as a dip!
