What do you need: for 8 - 12 pieces
375 grams spelled flour,
4 tsp tartar baking powder,
100 grams of coconut oil,
pinch of salt.
1 to 1.5 kilos of apples (peeled and diced),
1 tbsp cinnamon, 2 tbsp lemon juice,
80 grams (unsweetened) apricots,
Extra: some apricot jam or vegetable milk to spread the cake before it goes into the oven.
This is how you make it:
Preheat the oven to 180 degrees and line the bottom of a spring form (18 cm) with baking paper. Grease the edges with vegetable butter.
Combine all dry ingredients for the soil in a large bowl and mix well together.
Add the coconut oil to the flour and knead it together with your hands or dough hooks. Is the dough too dry? Then add some vegetable milk.
When you have a dough ball, wrap it in cling film and let the dough rest in the fridge for 30 minutes.
In the meantime you can get started with the apples. Peel and cut into cubes. Put the pieces of apricots with the apple together with the other ingredients and mix thoroughly.
Take 2/3 of the dough and make the bottom and edges for the cake in the spring form.
Put the apples in the spring form and make a pattern with the remaining dough for the top. You can make strips, I have seen flowers with a cutter.
Spread the cake with some apricot jam (vegetable milk can also) and slide into the oven. The cake is ready after about 50-60 minutes. If it goes too fast, cover the cake with foil so that the top does not turn black.
Remove the cake from the oven and allow to cool for 10 minutes. Remove the spring form and let it cool down further.
Cut the cake into the desired pie pieces and finish with a vegan whipped cream.
