what do you need:


175 grams of homemade condensed milk (at the bottom of this recipe is the recipe for the condensed milk)
150 grams Greensweet Brown
75 grams of butter
50 ml of water
1 gram of xanthan gum

How are you?


Line a small square dish or baking tin with baking paper
Put all ingredients, except the xanthan gum, in a pan.
Bring it to the boil while stirring and let it simmer for 10 minutes.
Add the xanthan gum and puree with a hand blender into a thick but smooth mass.
Pour the mass into the mold and let it harden / harden well in the refrigerator.
If it has become hard enough, you can cut out blocks.
Keep the caramelo's in the fridge, I advise to serve it cold (then it seems most like fudge)

 

Sugar-free condensed milk

what do you need:


500 ml of whipped cream
50 grams of butter
5 grams of Greensweet Extra Sweet

This is how you make it:


Put everything in a saucepan, and bring it to the boil while stirring.
let it reduce for 1/3, this takes 25 to 30 minutes.
Pay attention in between, because if the whipped cream is boiling, it can start foaming immensely, then lower the heat. So it is not bad if you heat the mixture several times on medium heat.
As soon as the whipped cream is boiled enough, you turn off the heat and let it cool down (between stirring).
Then transfer it to a glass jar and store in the refrigerator.

It can be kept in the fridge for a week on average
