Sandra's version of Foe Yong Hai

What do you need: (for 4 people, 4 points per person)


For the egg:


12 eggs (beaten loose in a large bowl)
150 grams chicken fillet (8 minutes pre-cooked and plucked)
75 grams of mushrooms (in slices)
25 grams of bamboo shoots (cut)
50 grams of grated carrot
½ red pepper (cut into thin strips)
½ yellow pepper (cut into thin strips)
½ thin leeks (cut into half rings)
2 cloves of garlic (crushed and chopped)
½ bunch of celery leaves (small chopped)
10 grams of Greensweet erythritol
10 ml of sambal oelek
PAM spray

For the sauce:


200 ml Heinz 50% tomato ketchup
300 ml of water
1 onion (smallly chopped)
2 cloves of garlic (crushed and chopped)
175 grams of peeled tomatoes (drained and super small minced)
75 ml of red wine vinegar
45 grams Greensweet Stevia Brown
25 grams of cornstarch (dissolved in a small amount of cold water)
15 ml of sesame oil
15 ml of ginger syrup
pepper and salt (from the mill)

This is how you make it:

Boil the chicken in water with salt and pepper and leave to boil for 8 minutes with lid on the pan. Let cool and fluff the chicken into strips.

Mix all ingredients for the egg (except the PAM spray), by the beaten egg. Season with salt, pepper.

Set aside and start with the sauce.
Fry the onion with the garlic in the sesame oil.

Add the peeled tomatoes and stir fry for a minute, add the tomato ketchup and red wine vinegar and bring to the boil.

Strain the sauce, put back on the heat and add the water, the Greensweet Stevia Brown and the ginger syrup while stirring. Add the cornstarch paste, stir together and bring back to the boil. Let it boil gently. If it is thick enough, put the sauce separately on low heat with a plate in between and continue with the egg.

Spray some PAM spray into a deep frying pan and lower the heat. Put in the egg mixture with the vegetables and put a lid on it. Fry over low heat until the egg starts to solidify. When the egg solidifies, stir fry everything together so that you get a loose egg substance.

When the egg is ready, put the egg in a bowl and pour the sauce over it.

Enjoy your meal!

I ate it with cauliflower rice, stir-fried 5 minutes in 15 ml soy sauce, 10 ml sambal oelek and 15 ml sweet soy sauce, flavored with salt and pepper (for 4 people, 0 points)
