Walnut rolls

What do you need: (For about 15 Notes rolls)

200 grams spelled flour

2 eggs

1 level el of raw cocoa powder

50 grams Greensweet Icing

150 grams of soft butter
pinch of salt

250 grams of mixed raw nuts

1 el Greensweet Brown.

200 grams of homemade almond paste

For the almond paste you need:

100 grams of almond flour

100 grams Greensweet Brown
1/2 egg

grater of 1/4 lemon.

How to make the nuts rolls:

Start by making the almond paste.

Put the almond flour, Greensweet Brown, the half egg and the lemon zest in a bowl and mix well until you have a nice sturdy ball, then make a package of it put it in plastic wrap in the refrigerator. until you need it.

Strain the spelled flour in a large mixing bowl. Separate the protein and yolk from 1 egg. Stir in the cocoa, icing, egg yolk and salt through the flour and make a nice smooth dough.

Form a ball from the dough, wrap it in foil and place it in the refrigerator for 30 minutes.

Meanwhile, finely chop the nuts. After half an hour you remove the dough from the refrigerator and divide it into 2 equal parts. Place each half between 2 sheets of parchment paper and roll them out to 3 mm thick slices of 15 x 20. Knead the almond paste and roll it out into a slice the size of the dough sheets. Brush a dough slice with the egg white, first lay the marzipan on top and then the second dough slice above.

Separate the egg white and yolk from the second egg and brush the dough slice with it and sprinkle with half of the chopped nuts. Roll up the dough slice, wrap it in foil and leave it in the fridge for 90 minutes.

After 90 minutes, preheat the oven to 200 degrees (convection oven 175 degrees) cover a baking tray with parchment paper, remove the dough from the refrigerator.

Stir the rest of the finely chopped nuts and the dessert spoon greensweet brown. brush the rolling pin with the rest of the egg and roll it through the nuts / sugar mixture.

Cut the roll into about 15 slices of 1 cm thick, place them on the baking tray and bake in about 12 minutes. Allow them to cool down on a cake rack

the only thing you still have to do now is to choose your favorite cookies and enjoy them deliciously.
