Peanut sauce for eg chicken satay

What do you need: (for 4 people, 2 points per person weight watchers)


45 grams Calvé peanut butter light
1 teaspoon sambal oelek
1 small onion (chopped)
3 cloves of garlic (crushed and chopped)
3 tablespoons of soy sauce
1 teaspoon cumin powder (djinten)
1 teaspoon coriander powder (ketoembar)
1 1/2 tablespoon (s) white wine vinegar
1 teaspoon of laos powder
200 ml of water
1 dessert spoon Greensweet Erythritol sugar (= 0 points!)
1 piece (1 x 2 cm) ginger root (small cut)
30 ml coconut milk light

This is how you make it:


Fry the onion with sambal, the djinten, the ground coriander seed, the laos and the Greensweet erythritol sugar in a little water (yes yes, no butter or oil but water!).
(if it goes too fast, add some water and keep stirring, do not add any butter or oil!)
When the onions are soft, add the garlic and the ginger and stir in for a moment.
Add the water, the white wine vinegar and the soy sauce. Stir together and bring to a boil. Let it simmer for a few minutes.
Add the peanut butter and the coconut milk, bring to the boil and simmer for 10 minutes, stirring occasionally.
