What do you need:

200 grams spelled flour
200 grams of coconut oil
70 grams of Arenga palm sugar
70 grams Greensweet Erythritol
4 drops Greensweet liquid stevia with vanilla flavor

3 eggs
1 / 2nd teaspoon baking powder
1 / 2nd teaspoon of salt

Eva was having a birthday and we were celebrating! I always try to make everything as healthy as possible, but because I felt so festive now and we already have so many restrictions in the field of nutrition, I wanted to make an extra nice cake and not wholegrain and with lots of fiber, but just very tasty . We without sugar, wheat and dairy, but with white spelled flour.

Because I love easy and fast, with not too much washing, I put my mix bowl on the scale and weigh everything in 1x off.
Because it was a hot day, the coconut oil was already nice and soft.
If that is not the case, then you should let it melt in a pan (au bain-marie) or the microwave.

I turned my Magimix on for 5 minutes until I had a nice and smooth fitting.
With two tablespoons I have divided the batter into 24 cake molds that I can put in a cupcake tray in the oven.

I heated the oven at 180 ℃ and baked the cakes in 170 minutes at 170 ℃. When I checked for the first time if they were done by poking them with a skewer, they were immediately good.
Is that not the case with you and is there still liquid batter on your skewer? Leave them in the oven for 5 minutes and then check again.
