Christmas tree cupcakes

What do you need:

Christmas tree butter cream

225 milliliters of skimmed milk
22 grams of custard powder
2 grams of Greensweet Extra Sweet
pinch of vanilla bourbon
180 grams of soft butter
50 grams Greensweet Icing

a few drops of green food coloring

This is how you make it:

Mix a dash of milk with the custard powder into a paste.
Bring the remaining milk with the Greensweet extra sweet and the vanilla to the boil.
Pour a little warm milk with the custard paste, stir well and pour everything back into the pan.
Bring back to the boil and let it say "blub" a few times.
Pour the pastry cream onto a plate, cover with plastic wrap and allow the cream to cool down in a handwarm.
Turn butter, pastry cream and icing into a smooth cream.
If the color turns white, the cream is good.
Color the butter cream with green coloring so that your Christmas tree has butter cream
Put the butter cream in a piping bag and put in the refrigerator until use.

 

Cake batter

250 ml of whipped cream
4 eggs
¼ teaspoon cream or tartar (optional, keep the protein longer firm)
30 grams of Greensweet Extra Sweet
175 spelled flour
6 grams of tartar baking powder
pinch of vanilla bourbon
pinch of salt


This is how you make it:

Preheat the oven to 160 degrees
Put a muffin tray ready and put the muffin molds in here
Split the eggs, beat the proteins with the Greensweet extra sweet and cream or tartar until it is an airy mass.
Beat the egg yolks and add this to the proteins
whisk the cream until it is stiff.
first put a small amount of whipped cream into the egg whites and make 'family' (mix well with each other) then add this mass to the remaining whipped cream and mix carefully.
Add the flour, baking powder, salt and vanilla powder and carefully fold through.
Fill the molds for 2/3 with the batter
Bake the muffins for 30 minutes, check in between


glaze layer

The glaze layer is made by making a paste with Greensweet stevia icing and water or milk.

Finish off!
Everything made? beautiful, then it's time to decorate your Christmas tree cupcakes!
Apply a layer of glaze on each cupcake (snow)
then spray a Christmas tree with the butter cream, in my baking video you can see how I do that.
decorate the Christmas tree with whatever you have in the house (coconut grater, cocoa nibs name it !, I have used (sugar-containing) chocolate balls and colored sprinkles.
dust the Christmas trees with a bit of icing, as if it just snowed!
