Mint Cheesecake
You need this:
For the soil:
- 200 grams of almond flour
- 50 grams of buckwheat flour
- 100 grams oatmeal (dry)
- 100 grams of sunflower seeds
- 1 tablespoon greensweet stevia extra sweet
- 10 drops greensweet liquid stevia mint
- 200 ml of water (if necessary, add a little more)
For the quark topping:
- 600 grams of biological / dynamic quark or other options (see above)
- 2 grams of Agar Agar (powder)
- 12 drops greensweet liquid stevia mint
- two kiwis cut into slices
This is how you make it:
Preheat the oven to 185 degrees. Grease a high round shape (20 cm) with avocado oil or coconut oil, and coated with baking paper. Grind all ingredients for the bottom in the food processor to a homogeneous mass. Pour into the mold and press to a firm round bottom. Bake the bottom in the middle of the oven until about 30-35 minutes, keep checking.
Put the curd in a saucepan and add the rest, let everything boil under constant stirring. Pour the curd on the bottom. Divide the kiwi slices over it. Allow to cool for a few hours and stiffen in the refrigerator.
