Royal cookies

 

What do you need:

75 grams of brown rice flour,

75 grams of wholegrain rye flour (another type of flour is also possible),

50 grams of almond flour,

¼ tsp salt,

½ teaspoon of vanilla,

2 tbsp coconut oil,

15 grams of Extra Sweet from Green Sweet Stevia,

1 tbsp agave syrup,

1 teaspoon tartar baking powder

4 tbsp oat milk (or another vegetable milk).

Topping: orange, apricot jam or homemade papaya jam

 

This is how you make it:

 

Step 1

Preheat the oven to 180 degrees and cover a baking tray with parchment paper.

Step 2

Add all dry ingredients together in a large bowl and mix well together.

Step 3

Add the coconut oil to the flour and knead it together with your hands or dough hooks. Add the milk.

Step 4

When you have a dough ball, wrap it in cling film and let the dough rest in the fridge for 30 minutes.

Step 5

Now roll 10-12 of the same ball and press it flat on the coated baking tray and push it into a well.

Step 6

Fill the well with jam of your choice and slide the griddle into the preheated oven. The cookies are ready after about 12-15 minutes.

Step 6

Let the cookies cool down and keep them in a drum that can close well. Your boho-tiffin can also be used for this!
