Vegan mini stollen from Monique van der Vloed

You need this:

  • 500 grams of oatmeal flour (grinding oatmeal in the blender into flour)
  • a big banana, pureed
  • 2 large full tablespoons greensweet-stevia extra sweet
  • 10 grams (tartar) baking powder
  • a coffee cup goj berries, soaked and drained
  • a coffee cup of Sultana raisins, soaked and drained
  • a coffee cup of blond or black mulberries, soaked and drained
  • hot water

(* you do not have to use topping, if you do not want this, this topping gives the coats a nice crunchy bite and a nice color.)

This is how you make it:

Preheat the oven to 185 degrees. Line a baking tray with baking paper. Stir all the ingredients for the solids into a bowl, stirring in small amounts of hot water until a smooth, but still sticky dough / batter is formed. Make a dough with a "pick" dough and place on the baking sheet. Make a cove with a spoon on the side so that they resemble mini-crumbs. Make a paste of the egg-substitute with the water. Spread this mixture over the coils and finally sprinkle generously with the cinnamon powder. Bake the coals in the middle of the oven until about 35-40 minutes, keep checking thoroughly. Allow to cool.

Sprinkle for generous sprinkling with the ICING icing sugar!
