This is how you make this delicious Christmas dessert:

Ginger biscuits:

Preheat the oven to 190 degrees.

Use a hand blender with a flat whisk. Don't have a stick blender? Then use hand mixer.

First mix: flour, ginger powder, Greensweet Sweet. Add the butter and mix all the ingredients on the medium setting until the dough becomes very crumbly. Knead the dough further with your hands. Place the dough ball on a plastic wrap. Make a 5cm thick sausage from the dough, wrap it tightly in the foil and let it stiffen in the freezer for 30 minutes.

Remove the dough from the freezer. Cut your dough into 1 cm slices. Place on the baking tray covered with parchment paper. Bake them for 15 to 20 minutes. until golden brown. Sprinkle with Greensweet Sweet Caramel if necessary. Let them cool down well.


Use a hand mixer. Add all ingredients to the bowl, beat until very creamy and light. Using a Tupperware container with a lid, pour the ice cream mixture into the container, put the lid on, and let it stiffen well in the freezer for 1 hour. Remove the ice 5 minutes before serving.

Orange Caramel:

Use a small pan. Heat Greensweet Sweet Caramel with orange juice. Turn up the heat and let the syrup reduce well until the color changes to a deep golden brown. (Watch the pan closely, once the syrup changes color it can burn very quickly). Reduce the heat a little, pour in the whipped cream and stir well for a few minutes (do not remove from heat). Add orange peel and reduce the caramel for 10 minutes. Serve lukewarm.

Setting up dessert:

Serve it in a nice gin and tonic glass. First pour caramel on the bottom. put a large scoop of ice cream in the center, break cakes into large pieces, serve with a few fresh orange pieces and a dash of caramel.
