What do you need:

  • 175 grams of walnuts
  • 100 grams chufa flour or teff flour (if you can't find both, 75 grams buckwheat flour + 25 grams coconut flour is also good)
  • 15 grams (tartar) baking powder
  • 2 tablespoons Green Sweet Extra Sweet
  • 1 fresh egg
  • 70 ml almond milk or other milk substitute

For the filling:

  • homemade cranberry jam or other jam

For the topping:

This is how you make it:

Preheat the oven to 185 degrees. Line a square baking tin (for example a brownie tin) with baking paper. Grind all the ingredients for the cake in a food processor until smooth. Pour into the mold and divide, tap well on the counter a few times. Bake the cake in the middle of the oven for about 25-30 minutes, keep checking in between. Let cool.

Cut the slice into nice square blocks. Carefully cut the blocks in half. Fill with the jam, and gently press the top half onto the jam. Make a glaze by stirring a little bit of milk at a time into the icing sugar. Garnish the cakes with the icing and press a whole walnut into the centre.
