What do you need:
200 grams of butter
1 egg
480 grams of spelled flour
200 ml lukewarm milk
1 bag of yeast
80 grams of Sweet Cinnamon


To roll into the buns:
120 grams  Sweet Cinnamon
3 tablespoon cinnamon powder

This is how you make these delicious buns:

Preheat the oven to 180 degrees.

Make sure the butter is cut into cubes and kept cold in the refrigerator. This must be added cold to the dough. Heat the milk until it is lukewarm and pour the bag of yeast into it. Let this stand together until the yeast has become frothy.

Weigh out your dry ingredients, flour and greensweet sweet cinnamon, and combine them in a mixing bowl. Add the egg to the milk and yeast mix. And pour it all together into the flour and the greensweet sweet cinnamon. Then take the butter from the refrigerator and add it to your dough. Mix this with a spatula or wooden spoon until it comes together as a dough. I prefer to use my hands for this step. So that the cubes of butter come together well with the flour. Cover your dough in the bowl and let it sit for half an hour.

Grab your dough and remove it from your bowl. Lightly sprinkle some flour on your work surface and roll out your dough into a slab of about 5 cm. In a separate bowl you can now mix Greensweet sweet cinnamon and the cinnamon powder. Sprinkle this directly on your dough and press with your fingers.

Once you have distributed the Sweet Cinnamon and cinnamon powder evenly over your dough, you can roll up the slice. Start at the bottom and work your way up. Roll up your cinnamon buns as tightly as you can. Then grab your baking tin. Place some baking paper in here.

Cut your cinnamon bun roll into slices that are approximately the same size. Do this with a sharp knife so that there is as little mess as possible. Place all the rolls next to each other in your baking tin. Lift the rollers carefully during installation. Once everything is in your baking tin, cover it with a tea towel and let it rise in a warm place in the house. I did this in a closed oven that was turned off. Let them stand for another half hour. After which you can start baking.

Bake the healthy sugar-free cinnamon buns at 180 degrees for about 40 minutes until golden brown. If you love cinnamon as much as you do, you will love the scent in your home. The Sweet Cinnamon from Green Sweet is also incredibly fragrant and works very well in this recipe.
