What do you need:

  • 150 grams of whole grain spelled flour
  • 75 ml coconut oil
  • 3 EL Green Sweet Sweet this is around 30-35 grams
  • 1 full EL cookie spices
  • 1 tsp baking powder
  • pinch of salt
  • 1 tbsp red dye in powder form, I used the Terre Exotique that I bought from Dille and Chamomile
  • soy milk or other (vegetable) milk

This is how you make these delicious gingerbread cookies:

Preheat the oven to 180 degrees and place a sheet of baking paper on a baking sheet. First mix the dry ingredients together. Then add the oil and knead by hand into a dough. If the dough is too dry you can add 1-2 tablespoons of milk. The dough should not get too wet, but also not too dry, but it remains a somewhat gritty dough. Turn the balls into dough, place them on the baking sheet and press them a little flat. Bake the pepernoten in 15-20 minutes. Let them cool completely.
