The new jelly Kristal by Greensweet-stevia is different from the regular jelly sugar. It is made with pure stevia and Agar Agar. Agar Agar is a vegetable gelling / binding agent made from seaweed. It is a 100% natural replacement for, for example, gelatin.
Greensweet-stevia jelly crystal barely contains calories and carbohydrates. This makes the jelly sugar the healthiest jelly sugar. The jam that you make is therefore also very low in (fruit) sugars.
Unlike other jelly brands, Greensweet Jelly does NOT contain Fructose (falls under sugars en) and Pectin.
Jam made with Greeensweet-stevia lasts for an average of 30 days. It depends on which fruit you use. Some fruits contain, as you have read earlier, more pectin than the other. It is also important that you do not use lemon juice. Agar Agar reacts poorly to acids, and will therefore start to clot less well. Do not add any fats (such as coconut oil or olive oil), Agar Agar can also withstand this. You should also not use kiwi and pineapple. These fruits break down proteins. You can add dairy products or vegetable dairy substitutes.
We can not make jams with the jelly crystal from Greensweet-stevia , which can last for years. But what is better than fresh jam? Right, nothing at all! ; ') Because the jam lasts for 20 days in the refrigerator, you can always make fresh jams as soon as the pot is empty. * When good sterilization of the jam jars the shelf life is about 6 weeks! Many people every year pick a lot of fruit from forests and other nature reserves where this is allowed or have fresh fruit from their vegetable gardens. By freezing this fresh fruit in portions of 500 grams, you can throw a portion of it straight from the freezer into the pan with 15 grams of GS jelly sugar. This can then be boiled and poured again in a clean pot and allowed to cool. So you do not have to cook dozens of jars of jam, and you always have a pot of fresh, but above all super healthy jam !!!!! Thanks to the enormous sweetening power of stevia, you no longer need a sweetener to sweeten the jam.
* For even thicker jams you can add 2 grams of Agar Agar on the 500 gram. :)
Did you think you can only make jam with Greensweet-stevia jelly crystal? Then I have good news. Because you can also use the jelly sugar as a binder, and even in light form to replace gluten in your non-fussy baking! It can replace sugar, eggs, and gluten in one go, although this again depends on the ingredients. On average, you need about two tablespoons (about 15 grams) of jelly sugar to sweeten a baking and give light binding. Naturally, moisture is also needed to activate the Agar Agar. The jelly sugar is ideal for binding sauces and soups, or for making custard and pudding. Because the jelly crystal of Greensweet-stevia is vegan, vegans can also use it to their heart's content.
