The new Jelly Crystal from Greensweet-stevia is different from the regular jelly sugar. It is made with pure stevia and Agar Agar. Agar Agar is a vegetable gelling / binding agent, made from seaweed. It is a 100% natural replacement for gelatin, for example.
Greensweet-stevia Jelly Crystal contains hardly any calories and carbohydrates. This makes the jam sugar the healthiest jam sugar available. The jam you make therefore also remains very low in (fruit) sugars.
Contrary to other brands of jelly, Greensweet Jelly contains NO Fructose (comes under sugars) and Pectin.
Limited shelf life
Jam made with Greensweet stevia has an average shelf life of 45 days. It strongly depends on which fruit you use. Some fruits, as you have read before, contain more pectin than others. It is also important not to use lemon juice. Agar Agar reacts badly to acids and will therefore not solidify as well. It is preferable not to add fats (such as coconut oil or olive oil), Agar Agar can also not handle this well. You should also avoid using kiwi and pineapple. These fruits break down proteins. You can add dairy products or vegetable dairy substitutes.
We cannot make jam with the jelly crystal of Greensweet-stevia, which can be kept for years. But what could be better than fresh jam? Right, nothing at all! Because the jam can be kept for an average of 45 days in the fridge, you can make fresh jam again and again as soon as the jar is finished.

Many people pick a lot of fruit every year from forests and other nature areas where this is allowed or have fresh fruit from their vegetable gardens. By freezing this fresh fruit in portions of 500 grams, you can always throw a portion straight from the freezer into the pan with 15 grams of Greensweet jam jelly crystal. You can then let this boil and pour again into a clean pot and let it cool. Then I have good news. Because you can also use the jam sugar as a binding agent, and even in a light form as a replacement for gluten in your non-itch baking!
