The new jelly Crystal from Greensweet-stevia is different from the regular jelly sugar. It is made with pure stevia and agar agar. Agar Agar is a vegetable gelling / binding agent made from seaweed. It is a 100% natural replacement for, for example, gelatin.
Greensweet-stevia jelly crystal contains hardly any calories and carbohydrates. This makes the jelly sugar the healthiest jelly sugar available. The jam that you make therefore remains incredibly low in (fruit) sugars.
Unlike other jelly brands, Greensweet Jelly contains NO Fructose (covered by sugars) and Pectin.
Jam made with Greeensweet stevia has an average shelf life of 30 days. It is highly dependent on which fruit you use. Some types of fruit contain, as you have read before, more pectin than the other. It is also important that you do not use lemon juice. Agar Agar reacts poorly to acids, and will therefore start to solidify less well. Preferably also do not add any fats (such as coconut oil or olive oil), Agar cannot tolerate this either. You should also not use kiwi and pineapple. These fruits break down proteins. You can add dairy products or vegetable dairy substitutes.
We cannot make jams with the jelly crystal from Greensweet-stevia that will last for years. But what is better than fresh jam? Right, nothing at all! ; ') Because the jam lasts an average of 30 days in the fridge, you can make fresh jam again and again as soon as the jar is finished. * With good sterilization of the jam pots the shelf life is around 6 weeks! Many people pick a lot of fruit every year from forests and other nature reserves where this is permitted or have fresh fruit from their vegetable gardens. By freezing this fresh fruit in portions of 500 grams, you can always throw one portion directly from the freezer into the pan with 15 grams of Greensweet jam jelly crystal. You can then let this boil and again pour into a clean pot and let cool. That way you don't have to cook dozens of jars of jam, and every time you have a pot of fresh, but above all super healthy jam !!!!! Thanks to the enormous sweetness of stevia you no longer need any sweetener to sweeten the jam.
* For even thicker jam you can add an additional 2 grams of Agar Agar to the 500 grams. :)

Because you can also use jelly sugar as a binder, and even in light form to replace gluten in your itch-free baking! It can replace sugar, eggs, and gluten in one go, although this also depends on the ingredients. On average you need about two tablespoons (about 15 grams) of jelly sugar to sweeten a baking and give it a light bond. Naturally, moisture is also required to activate the Agar Agar. Eindelijk een suiker om heerlijke jam mee te maken. Dit kun je met veel fruit/ groente combineren.
Ik heb er zelf oa pompoengelei mee gemaakt.. Verrukkelijk en weinig stijging van mijn bloedsuikers. Topspul!!
