Vegan chocolate dimes
What do you need:
- 250 grams whole grain buckwheat flour
- 2 heaping scoops/tablespoons of pure coconut oil/fat at room temperature
- 2 tablespoons Green Sweet extra sweet
- 10 drops of Green Sweet liquid stevia chocolate
- 200 ml oats or other milk substitute
For the filling/topping:
- 6 heaping tablespoons of organic low-fat cocoa powder
- 10 drops of Green Sweet liquid stevia chocolate
- hot water
Optional, but makes it tastier and more festive:
- slivered almonds
- cocoa nibs
- Goji berries
- ceylon cinnamon powder + vanilla bourbon
- kasha
- yellow mulberries
- coconut grater or shavings
This is how you make it:
Preheat the oven to 185 degrees. Line one or, if necessary, two baking sheets with parchment paper. Mix all the ingredients for the biscuits well in a bowl.
Place small mounds on the baking sheet. Prepare a bowl with water and always dip a spoon in the water, make the cookies as flat and even as possible with the convex side of the spoon.
Bake the cookies in the middle of the oven for about 45 minutes, keep checking in between. Let cool.
You can leave the cookies as is, but you can also cut them out into even rounds with a cookie cutter. Mix the stevia drops with the cocoa and add little bits of water at a time until a firm glaze is formed. Spread some icing on one cookie and press another cookie on top. Spread the icing on the cookies and garnish with the options above.
