Pumpkin has a naturally sweet taste, but many children do not like this vegetable, simply because it is a vegetable. With these cookies you hide the pumpkin in a tasty healthy and sugar-free pastry: So you don't have to feel guilty after eating these cookies because you have a portion of vegetables and no sugar ;)

I wanted to try them because I like sweets in between but I always want something nutritious. The combination of oatmeal and spelled flour means that you can also eat the cookies for breakfast.

What do you need:

100 g spelled flour
100 g oatmeal flakes
1 teaspoon baking powder
200 g pumpkin
75 g coconut butter
20 g Greensweet stevia sweet
10 drops Greensweet liquid stevia orange
Greensweet-stevia chocolate dark (single pieces)
Egg yolk for the dough
Protein to rub into the cookies just before they go into the oven

This is how you make it:

Peel the pumpkin and cut it into cubes (200 g), boil it in a little water until soft so that you can mash it (after draining the water). Add the coconut butter as soon as you start mashing because the temperature will soften the butter quickly and you will not have lumps of butter. Then add the egg yolk, spelled flour, oatmeal, baking powder and Greensweet sweet and the liquid stevia (both the powder and the drops). Grate (to your own taste) some more chocolate through the batter and knead! Then roll out the dough until it is about a centimeter thick and cut out the cookies with molds. Place the cookies on baking paper on the baking tray. Before they go into the oven, you can put some chocolate chips over them and finally smear the cookies with some egg white.

I preheated the oven to 160 degrees and baked the cookies for 25 minutes. with still orange juice to add but doubted the consistency. It is then of course like that the dough becomes too soft. Orange zest is also an option. Don't expect typical cookies, but a tasty and healthy version!
