What do you need:

Bottom:

  • 35 grams of goji berries (let it know in warm water for 10 minutes),
  • 100 grams of dates (if you use hard dates, soak for a while in warm water),
  • 1 teaspoon vanilla,
  • raps of 1/2 organic lemon
  • 50 grams of puffed quinoa (you can do more if you want a thicker base).

Filling:

  • 1000 grams of rhubarb,
  • 500 grams (frozen) strawberries,
  • 2 tbsp Green Sweet Icing,
  • raps of ½ organic lemon,
  • 2 beetroot (peeled),
  • 12 grams of agar agar
  • 200 ml of water.

This is how you make it:

Take a cake pan and cover it with baking paper. Line the edges with baking paper or grease with some vegetable butter. Also make sure you have space in your fridge!

Place the soaked dates, goji berries, vanilla and lemon zest in a large bowl and add the puffed quinoa. Knead everything together well with your hands.

Do you want a thicker bottom? Then add more puffed quinoa and when it gets too dry, add some more dates. Tune in yourself to what you like.

You make the bottom of the cake with your dough ball. Then put it in the fridge so that it can harden.

Clean the rhubarb and cut into chunks. Put them in a pan with a layer of water together with the frozen strawberries and the peeled beetroot. Put it on the fire and after about 15-20 minutes it is ready. Drain and drain. Do you use fresh strawberries? Then you don't have to cook them.

Put the rhubarb and beetroot together with the strawberries, 2 tablespoons of Green Sweet Icing and lemon zest in the food processor. Provide a smooth smoothie. Taste if you like it that way. Do you want it sweeter? Then add more Green Sweet Icing or whatever you use.

Take a large pan and add 12 grams of agar-agar with 200 ml of water. Bring to the boil while stirring. Then add the pie filling. Keep stirring well for 2 minutes.

Take the bottom out of the refrigerator and pour the mixture into the bottom. Now put in the fridge and let it stiffen. After 2-3 hours your cake is ready to be cut.

Decorate the cake with fresh fruit. For example, think of blueberries, currants, strawberries or whatever you like. Cut the how many points you want from the cake. You can also freeze the cake (in individual slices).

The cake can be kept in the fridge for about 3 days
