What do you need:
100 grams of almond flour,
100 grams of coconut flour,
100 grams of linseed meal,
1 teaspoon of tartar baking powder,
1 tbsp coconut oil (melted),
1 tbsp gingerbread spices (biscuit spices or cinnamon are also possible),
pinch of Himalayan salt
100-125 ml almond milk.
Almond paste:
125 grams of almond flour,
grate ½ (small) organic lemon,
juice of ½ (small) organic lemon,
1 egg ersatz.
3-4 golden rennets (or another apple variety),
1 tbsp cinnamon.
(also delicious with dried fruit, such as raisins, figs, dates or apricots).
1/4 of the dough + 20 grams (gluten-free) oatmeal and some walnuts (other nuts are also possible).
This is how you make it:
Step 1
Preheat the oven to 170 degrees and cover the pie base with baking paper and grease the edges with some (coconut) oil. I used a 22 cm cake pan.
Step 2
First get started with the almond paste. Put all the ingredients in the food processor and let it do its job. When you get a ball, turn off the food processor. Taste if it is that way. Make a ball and wrap it in cling film and put in the fridge for about 30 minutes.
Step 3
Make sure your food processor is clean. Place all ingredients in the food processor except the almond milk and turn on the food processor. Add the almond milk little by little. The dough should not be too wet, but also not dry. Make a ball and wrap it in cling film and put in the fridge for about 30 minutes.
Step 4
Meanwhile, peel the apples and cut them into cubes or flat slices. Put them all in a large bowl and sprinkle the Greensweet erythritol and cinnamon on top. Shovel carefully.
Step 5
Take the dough from the refrigerator for the bottom and edges. Keep 1/4 of the dough aside. Press the dough well on the bottom and cover the edges with the dough. Then cover the bottom with your homemade almond paste.
Step 6
Place the apple slices or cubes on the bottom.
If you would like to add dried fruit or nuts, you can do that in step 4.
Step 7
Crumble ¼ of the dough into a bowl and add the oatmeal and some walnuts. When you have a crumbly mixture, sprinkle it on the apple slices or cubes.
Step 8
Place the pie pan in the oven and your apple pie is ready after about 50 minutes.
Step 9
Let the cake cool down and cut out at least 8 pieces. Delicious with a dot of coconut whipped cream.
Doesn't the cake go right away? You can also freeze the cake well. Freeze the slices and preheat the oven to 170 degrees and then put your slice of cake in the oven for about 15-20 minutes. This way you always have a nice piece of cake at home.
