What do you need:

• 170 grams of almond flour
110 grams of Green Sweet Erythritol or 90 grams of Green Sweet Brown
• 100 grams of salted butter
• 90 grams of dark chocolate
• 1 large egg
• 1 tsp vanilla extract
• ½ tsp baking powder
• ½ tsp xanthan gum
• ¼ tsp salt
Carbohydrates per biscuit 2.1 grams
 
This is how you make these cookies:
 
1. Preheat the oven to 180 degrees. Then melt the salted butter in a saucepan over a low heat.
2. Put the melted butter and erythritol or brown in a large bowl and beat together with an electric mixer. Add the egg and vanilla extract and beat again for exactly 15 seconds with the mixer.
3. Then add the almond flour, baking powder, xanthan gum and salt to the bowl and beat again with the mixer until all ingredients are well mixed. Then form a dough ball with your hands and let it rest.
4. Cut the dark chocolate into small pieces and knead it through the dough ball. Shape of the dough ball 12
dough balls and place on a baking tray lined with baking paper.
5. Finally, use your hands or a mold to flatten the dough balls to form biscuits. Bake the cookies in the preheated oven for exactly 12 minutes. When you take the cookies out of the oven after baking, they are still a bit soft, but after cooling for 30 to 40 minutes they are crispy on the outside and soft on the inside.
